The challenge

Coordinating food-safe construction, ventilation and an efficient kitchen workflow

The primary challenge was to turn an open commercial structure into a food-service facility with clearly separated cooking, preparation, storage and cold-room zones. The plan had to support an efficient sequence from receiving and refrigeration through preparation, cooking, holding and customer service.

Large stainless steel appliances and exhaust hoods require accurate positioning. Moving one item can affect duct routes, electrical or gas connections, fire-suppression coordination, cleaning clearances and the working aisle. These dependencies had to be resolved before the equipment was permanently connected.

Insulated sandwich panels formed much of the internal enclosure. Wall, ceiling and cold-room panels needed straight supports, controlled joints and coordinated openings. Installation also had to proceed around structural steel, overhead service routes and equipment already entering the space.

Steel framing and insulated panels established durable, cleanable zones, while door openings and cold-room locations were formed to match the operating plan. Materials were staged so the team could continue assembly without blocking critical circulation routes.

The cooking equipment was grouped below purpose-built exhaust hoods. Hood supports, appliance dimensions and service access were reviewed together before final positioning. Refrigerated displays, counters and shelving were located to support food flow while retaining usable aisles for staff, cleaning and maintenance.

The fit-out was completed in sequenced stages, allowing enclosure work, ventilation, equipment setting and service coordination to advance without concealing unresolved interfaces. Final positioning prepared the facility for qualified trade connections, testing, inspections and commissioning.

Insulated enclosure
